It is important to know that eggs can be temperamental when making omelets. Eggs must be purchased fresh, preferably organic, and kept chilled until ready for cooking. If they are not kept cold enough, the whites won’t form properly. The yolks will also break down too quickly and become runny. This causes your omelets to look oddly colored. If you want to make omelets right away, it's best not to use eggs that are too cold.

Another tip is to separate your egg before adding it into the pan. Because this could cause your omelet to become curdled, you don't want any yolk to be mixed with any white.

The egg can burn if it is placed directly on the stovetop. Instead, microwave the egg for 10 seconds before adding it to the pan. The microwave heat will cook the egg just right without making it too hot.

Next, let's talk about mixing the eggs. When mixing eggs, it is important to thoroughly beat them. To do this, grab the bowl of the mixer and turn it upside down. Then, vigorously shake the bowl. This allows the air to be whipped and the egg to be mixed thoroughly.
